4 cups diagonally sliced carrots
½ cup chicken broth
3/4 tsp ground ginger
1 ½ tsp grated lemon peel
1 cup orange juice
1/4 tsp allspice
3 Tbs sugar
PREPARATION:
In a medium saucepan combine carrots, orange juice, chicken broth, allspice, ginger, and lemon peel. Bring to a boil. Stir in sugar, cover, and simmer for 25-30 minutes, or until carrots are tender.
